Full Description
Shiraz was picked in three different parcels on 23 and 25 March. We used a totalof 30% whole bunch and fermented six parcels in a combination of 1, 2 (and asingle five tonne) vessels. Post malolactic fermentation, all ferments were basketpressed after 16 days on skins. The wine was aged for 12 months in old and new500 litre French puncheons and a pair of 600L demi muids. The outcome is abalanced wine presenting an equilibrium of acids and tannins. Part of the "12Hr Wine Sale - 10pm-10am" sale on Grays.
