Full Description

A fresh, lo-fi spin on a traditional Hunter Valley classic, crafted by minimal-intervention winemaker Peta Kotz. Drawing inspiration from the Japanese philosophy of wabi-sabi (embracing imperfection), Kotz picks the organically grown grapes early for zippy energy, then allows them to spend two weeks on skins and six months on lees to create an aromatic, offbeat, skin-contact white with plenty of attitude. Colour: Bright golden straw with a slight, unfiltered haze from skin ferment. Aroma: Highly aromatic and lifted, showcasing fragrant layers of white flowers, native lemon myrtle, lemongrass, and stone fruit pith. Palate: Delicate, light, and wonderfully textural. The palate bursts with fresh, crunchy citrus and orchard fruits layered over a savoury, chalky depth that keeps you coming back for another sip. Structure: Driven by a bright, salty tang and electric natural acidity. It finishes bone-dry, framed by a soft, powdery line of fine skin tannins that give the wine great structural grip. Part of the "Bottle Shop Closure" sale on Grays.
