Shiraz is the red icon of the uber-cool Great Southern with different interpretations from, and within, the five sub-regions of Mount Barker, Porongurup, Frankland, Albany and Denmark.We chose this block on a north facing gravelly ridge planted to a newer shiraz clone (470) as a special project. This is a clone from France recently imported and being trialled in several vineyards in the Southwest.Handpicked and wild fermented in 2x 2T open top fermenters one with 100% whole bunches, there other 100% destemmed, pressed at dryness and aged in French oak puncheons for 15 months (25% new).An organic egg white was used to fine the Business Time which was bottled without filtration and just a little sulphur dioxide added.
