The 2024 Clare Valley vintage began with a relatively dry winter and early spring, leading to an early budburst and flowering. Timely preChristmas rain created ideal conditions for vibrant, fresh wines. Pinot Noir was harvested during the coolest part of the day and gently crushed using a destemmer to avoid over-macerating the berries. The fruit underwent a cold soak for six days, with gentle circulation twice daily to enhance the fresh cherry flavours and soft, fruit-driven tannins. Fermentation temperatures were kept low with max of 22°C topreserve the delicate fruit characters. The wine was then gently bagpressed for a fresh, medium-bodied palate and racked into seasoned French oak hogsheads to complete malolactic fermentation, addingcomplexity and balance to the wine. Part of the "12Hr Wine Sale - 10am-10pm" sale on Grays.
