A regal, highly sophisticated sparkling wine crafted by pioneer winemaker Rudi Bauer from organically and biodynamically farmed estate vineyards in Bendigo, Central Otago.Aged for an impressive 58 months on yeast lees before disgorgement, this vintage-certified Chardonnay-led sparkler delivers exceptional Champagne-like complexity and purity. Colour: Light gold with a persistent, energetic stream of exceptionally tiny, delicate bubbles. Aroma: Classic, inviting aromas of toasted brioche, lemon curd, and white floral notes, layered with nuanced hints of almond, white shoe cream, and subtle lanolin. Palate: Bracingly fresh and wonderfully creamy, featuring a lively, persistent mousse attack that gives way to pure flavours of crisp pear, citrus fruit, and a distinct low-dosage mineral structure.
